Fresh garlic scapes are rare outside Jeju. In Jeju, there’s a saying "Even with just Ma-nong-ji, you can have a meal" (meaning they’re so good people in Jeju eat them like rice). It’s a beloved local food.

The flavor of green-garlic scape pickles is very different from the wild garlic scapes used in Ma-nong-ji. The latter is less sharp and less spicy, with a fresh, mildly sweet, and slightly tangy taste that anyone can enjoy.
