How to wash hairtail without fishy smell

Add 2 tablespoons of coarse salt to 2L of rice washing water, stir, add hairtail, soak for 20-30 minutes, then rinse under running water.

Recipe | Braised hairtail

Ingredients: 4-5 cut hairtail, 1 potato, 1 red chili, 1 Cheongyang chili, 1 onion, 1 green onion

Sauce ingredients: 3 tablespoons Cheongju (rice wine), a pinch of salt

Seasoning ingredients: 4 tablespoons soy sauce, 2 tablespoons red pepper powder, 1 tablespoon minced garlic, 1 tablespoon soup soy sauce, 1 tablespoon sugar, a little black pepper, water (moderate)

  1. After washing the hairtail, soak it in the sauce mixture for 10 minutes.
    Tip: Refer to How to wash hairtail without fishy smell.
  2. Slice the potato 1 cm thick and slice the onion.
  3. Coarsely chop green onion and chili.
  4. In a pot, add the hairtail, seasoning ingredients, and water, then boil gently.
  5. Boil potato for 10-15 minutes on medium heat.
    Tip: Boil with the lid off to remove the fishy smell.
  6. Add green onion and chili, boil for 2 more minutes.

How to remove hairtail bones

  1. Pull the thinner fin edge outward to remove.
  2. Insert a spoon in the middle, lift only the flesh, and separate.
  3. Use chopsticks to separate and remove the remaining bones in the middle.

How to Cook Hairtail

  1. Cut hairtail into about 5-7 cm size sections.
  2. Peel radish, cut and put in pot, add water, then add hairtail with chili powder and chili paste.
  3. Boil on high heat, then add chili, onion, and boil gently.
  4. For grilled hairtail, cut into desired size sections.
  5. Sprinkle salt lightly and season evenly, cook in pan or grill slowly.
